Boiled Egg Curry


Ingredients:

  • Boiled Eggs-2

  • ½ cup sliced shallots

  • 2 tomatoes

  • 1-inch piece ginger peeled& crushed

  • 4 cloves of garlic peeled& crushed

  • 1 green chili

  • ½ teaspoon red chili powder

  • ½ teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 2 teaspoon black pepper powder

  • ½ teaspoon mixed spices

  • 1 teaspoon soy sauce

  • Salt to taste

  • 1 tablespoon coriander leaves

  • 1 tablespoon curry leaves

  • 2 tablespoon oil

Instructions


1. In a bowl mix pepper powder and salt. Coat the eggs with the pepper and salt.

2. Heat oil in a pan, add the eggs and fry them until lightly golden brown. Remove them from oil.

3. In the same pan add the curry leaves & shallots in the remaining oil. Cook them until transparent. Add the green Chilly and crushed ginger and garlic and cook until the raw smell goes off.

4. Then add the tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Mix well and cook until raw smell goes off.

5. Then add the soy sauce, mixed spices and cook for another two to three minutes.

6. Finally, cut the eggs in halves and add them to the pan. Mix carefully without breaking the eggs and cook for a minute.

7. Sprinkle the chopped coriander over the masala. Rest it covered for a minimum of 30 minutes for the flavors to blend in.

8. Serve.
